‘Chaat’ or ‘Chat’ is a savoury roadside snack served widely across India and the Indian sub continent. The original chaat is a mixture of dahi wada and aloo tikki with sweet yoghurt and a blend of Indian chutneys. The dish is garnished with sev, fresh coriander, onions and hot spices. The other popular variants include bhel, pani puri, samosa and tokri chaat. I love Indian street food and so I keep preparing it at home from time to time to savour the authentic Indian dishes. Ingredients
For making aloo tikki
- 5 large boiled potatoes
- 2 tsps red chilli powder
- 1 tbsp chaat masala
- 2 tsps cumin powder
- salt to taste
- 2 tsps coriander powder
- 1/2 tsp turmeric/haldi powder
- oil to fry the tikkis
Coating the tikkis
- 2 tsps cornflour
- 3 tbsps of water
For garnishing
- 1 bowl of thick, beaten sweetened curd/yoghurt
- Some chopped coriander
- 1 bowl of tamarind chutney
- Some nylon sev/shev/ plain bhujiya sev
- 1 bowl of green chutney
- Some chaat masala & red chilli powder to sprinkle from top
- 1 large onion finely chopped

Procedure to make aloo tikki chaat
- For making the tikkis
Mash the boiled potatoes in large bowl and add all the dry spices to it. Mix well and check the salt. I prefer to have them grated so that they are mashed well.

Combine all the ingredients well and make small balls of the mixture. Then flatten them with your palm and set aside

Now make a slurry of cornflour and water and dip the tikkis in it for it’s outer covering

Heat oil in a pan and shallow fry the tikkis on medium flame until crisp and brown from both sides.

Your aloo tikkis are ready to served

Place your tikkis in your serving plate and spread the green chutney first, then the tamarind chutney and then the sweet curd/yoghurt.

Sprinkle some shev/bhujiya, chaat masala, red chilli powder, coriander, onions and serve immediately. Your tasty aloo tikki chaat is ready.
