I love experimenting with food when it comes to making breakfast. Every morning my husband sits at the breakfast table awaiting his food with the expression ‘What’s new?’ and to live up to that expectation is quite a challenge being a working and a hands on mom. Phew! I’m not complaining🤪 Eating a healthy and well balanced breakfast is a must so that, it keeps you full for a longer period time and you have no urge to snack in between. One of my favourite breakfast items is the cheese capsicum toast, I just love this combination. The flavours are magical. Ingredients
- 4 slices of brown or white bread
- 1 finely chopped capsicum
- 2 green chillies finely chopped
- 1 small onion finely chopped
- salt to taste
- 1 medium boiled potato
- 1/4 tsp pepper powder
- 2-3 tsps of butter
- 1/4 tsp garlic powder
- 2 slices of cheese
Prep time : 15 mins | Cooking time : 10 mins | Serves : 1-2 |
Procedure to make cheese capsicum toast

Clean, wash and finely chop all the veggies and boil, peel and cut thr potato into small pieces. Mix all the veggies in a bowl and keep aside

Now apply some butter on the bread and place the vegetable stuffing on it

Then sprinkle some salt, pepper and garlic powder from the top and season it well

Now place one slice of cheese on the top and place another bread on top of it to make a sandwich

Put some butter on a flat pan and toast the bread from both sides until golden brown. Cover and cook for 5 minutes, so that the capsicum is well done and the cheese has smoothly melted.
