Roast Chicken ⎪ How to make roast chicken

How many times have you tried going on a diet and ended up eating more food at the end of the day ? How many times did you suffer from a midnight craving but had to let it go as you were dieting ? Don’t worry I have been there 🙂 What did I to keep myself from falling prey at such times ? I cooked appetizing meals that were mouth watering 🙂 I’m sharing one of my favourite Indian Roast Chicken recipe with you, hope you like it !

Indian Style Roast Chicken

Ingredients

  1. 500g upper thigh chicken
  2. 2 carrots
  3. 1/2 a slice of lime
  4. 2 potatoes
  5. 5-6 french beans
  6. 2 onions
  7. 3 tbsp olive oil

For Marination

  1. 1 cup fresh curd (dahi)
  2. salt to taste
  3. 1 tbsp turmeric powder
  4. 4 tsps red chilly powder
  5. 1 tbsp coriander powder
  6. 4 tsps cumin powder
  7. 1 tbsp ginger garlic green chilly paste
  8. 3-4 cloves
  9. 2-3 green cardamons
  10. 3-4 black pepper corns
  11. 1/2 inch stick of cinnamon
Prep Time : 15 minsRoasting Time : 20 mins/ Resting Time: 10 minsMariantion Time : 2 hrs

Procedure to make roast chicken

Time needed: 2 hours and 45 minutes

  1. For the marination you chop fresh ginger, garlic and green chilly

  2. And add in all the dry masala powders to it and blend it in a dry mixer to a coarse paste

  3. Begin Marination

    To begin, you add some curd to the chicken along with the freshly ground masala and mix well. You can check the salt at this time and see if you need to add more

  4. Adding the Masala

  5. Wash, peel and chop the veggies into cube size and add to the marinated chicken

  6. Drizzle some Olive oil in your baking dish

  7. Arrange all the veggies and your chicken into the baking dish and keep refrigerated for atleast 2 hours

  8. Roast/Grill the Chicken in a Traditional Oven or a Microwave Oven for about 20 mins. After the chicken has been cooked you can drizzle some more olive oil and let it rest for another 10mins inside the oven.

Tips

  • If you marinate the chicken overnight it will taste even more better and the pieces will just melt in your mouth.
