When you have a refrigerator full of veggies you can either think of making pav bhaji, veg pulao, hakka noodles or biryani. I do the same sometimes, well mostly, well all the time to be precise, but this time I thought of making an appetizer i long desired to eat. I thought it was going to be messy and quite a hassle, so I kept procrastinating preparing this dish. But finally after looking up some videos on YouTube and reading a few recipes online, I invented my very own version of Veg Crispy. I hope you find it easy to make and fall in love with this dish just as me and my husband did 🙂 Voila! There it is!! Ingredients
For marinating the vegetables
- 1 small broccoli/cauliflower florets
- 250g Mushrooms
- 200g capsicum
- 1 zucchini (optional)
- 2 small onions
- 1 cup all purpose flour
- 2 tsp ginger garlic paste
- salt to taste
- 1 cup gram flour
- 2 tsp chilly powder
- 2.5 tsp cumin ( jeera) powder
- 2 tsp coriander powder
- 1 tsp haldi powder
- oil to fry
For preparing the sauce
- 2 tbsps red chilli sauce
- 1 tbsp tomato sauce
- 2 tbsps sweet and sour sauce
- 5-6 pods of crushed garlic
- 1 tbsp olive

Procedure to make veg crispy

Clean, wash and roughly dice the vegetables

Now add in all the dry ingredients and spices under marination to a large mixing bowl with enough water water to make medium consistency like batter

Now add the chopped veggies to the batter and mix well. Let it rest for about 15- 20 mins so that the vegetables soak in the batter

In another pan drizzle some oil and fry garlic until crisp and brown but make sure that you dont burn the garlic

Then add the fried garlic to all the sauces, mix well and set aside

In the same pan, pour some more oil and fry the marinated veggies until crisp from all sides

Now add these veggies to the garlic mixture and toss it well so that the veggies are well covered in the sauce

Your tasty, yummy, crispy veg is ready to be relished. Trust me you and your guests will never get enough of this dish.
