This traditional English Pudding is a typical British dessert and it’s so easy to prepare without any sherry or wine that you can make for any festive occasion. The ingredients for this layered pudding are easily available and the recipe is also pretty simple. Christmas celebrations are incomplete without this one and I’m sure once you try this it will be a shining star of your table.
Ingredients
- Plain sponge cake 1/2 pound
- 200 ml of fresh liquid cream and 75g of sugar
- 2 cups of fresh fruits of your choice ( avoid citrus fruits)
- 3 tbsps of custard powder, 3 tbsps of sugar and 500ml of milk (any flavour will do)
- 1/2 a cup of fresh fruit juice/syrup/pulp (mango or pineapple could be preferred)

Procedure
- Chopping the fruits
Roughly peel, wash and chop the fruits of your choice and refrigerate them while you continue doing the other steps
- Making the csutard
Follow the instructions on the pack of your custard and prepare it. I have used 3 tbsps of WEIKFIELD custard powder dissolved in 10 spoons of warm milk and later added to 500ml of boiling milk with 3tbsps of sugar to make my custard. Let the custard cool off before adding to the pudding.
- Whipped Cream
Empty the contents of 200ml fluid cold fresh cream into a large mixing bowl and beat on high speed with your electric blender or you can do it with your hand untill light and fluffy. Gradually add 75g of sugar to it and continue beating untill thick and fluffy
- Making the pudding
Cut the sponge cake into cubes and arrange in a bowl. Take the desired bowl of your choice for setting up the custard. I have used a glass bowl.

Then spread some fruits pulp/juice/syrup on the cake, making sure that you don’t let it get soggy.

Now remove the refrigerated fruits and arrange on the cake pieces.

Pour the cooled off custard on it and spread well on the fruits

Take your whipped cream and spread it on the custard.

Repeat the above steps and decorate with pomegranate seeds or some fresh strawberries. Voila your custard is ready !
