Zucchini contains zero-fat and is high in water and fiber. My husband has always insisted on buying Zucchini after relishing it in the Chinese/Japanese/Thai Cuisine. So finally i bought some and decided to try making something yummy but at the same time healthy. I’m sure your kids are going to love this recipe and will keep wanting for more. Ingredients
- 1 shredded Zucchini
- 1 finely chopped onion
- 3 green chillies finely chopped
- 1/2 cup chopped coriander
- 1/2 cup chopped mint
- 1 egg beaten
- 1 tsp pepper powder
- 1 tsp ginger garlic paste ( optional)
- 5 tsp refined flour
- salt to taste
- 2 tsp oil to shallow fry

Procedure
Time needed: 20 minutes

Clean, wash, peel and grate/shred the Zucchini. Squeeze out all the excess water with your hands.

In a larger mixing bowl beat one egg add all the chopped items – coriander, mint, green chillies and onions along with the Zucchini. Mix all the ingredients nicely.

Now add in the dry items – refined flour, salt and pepper powder along with ginger garlic paste.

Mix all the ingredients well.

Now, pour 1tsp of oil on a flat bottomed pan and let it heat up nicely. Spread the mixture on the pan with a spoon and let it fry for sometime. I fried the fritters in two batches so as to space them out nicely.

Once it turns golden brown, turn to the other side and fry for a few minutes. Within 15-20 mins your Zucchini Fritters are ready to be served.
Tips
- You can add in some other veggies too, to make it more healthier
- If you want to avoid using refined flour you can replace it with rice flour
